  • 1 cup quinoa

  • 1/2 cup urad dal (split black gram)

  • 1/4 cup chana dal (split Bengal gram)

  • 1/4 cup moong dal (split green gram)

  • 1/2 cup rice flour

  • 1/4 cup finely chopped onions

  • 2 tablespoons finely chopped coriander leaves

  • 1 teaspoon cumin seeds

  • 1 green chili, finely chopped (adjust according to taste)

  • 1/2-inch piece of ginger, grated

  • Salt to taste

  • Water, as needed

  • Oil/ghee for greasing the dosa


Soaking: Rinse quinoa and dals thoroughly. Soak them together in water for about 4-6 hours or overnight.

Grinding: Drain the soaked quinoa and dals. Grind them into a smooth batter using a blender or food processor. Add water as needed to achieve a pancake batter consistency.
